It’s Stacy: Healthy Eats — Strawberries for Nutrition Month

Strawberry Spinach Salad

Every month was National Nutrition Month for my Great Grandmother, Arizona Henry. She understood the importance of eating healthy while getting daily exercise. She enjoyed walking well into her nineties.

March is National Nutrition Month, and it was created 50 years ago, in 1973. In celebration, I have shared my favorite salad recipe. National Nutrition Month promotes healthy eating and exercise. Good nutrition is the key to a healthier future. This year’s theme is “Fuel for the Future” and emphasizes eating with sustainability in mind.

Strawberries are a delicious addition to any healthy diet. They are an excellent source of vitamin C, manganese, folate, and potassium. They make an enjoyable low calorie, healthy snack.

Strawberry Spinach Salad

1 basket of fresh sliced strawberries

½ cup chopped pecan

¼ cup chopped red onion

10 oz. fresh spinach

¾ cup crumbled feta cheese

 

Place all salad ingredients in a bowl and drizzle with strawberry balsamic vinaigrette dressing until leaves are moisten.

Celebrate National Nutrition Month by making this salad that will provide you with “Fuel for the Future.”
