Quench Your Thirst with a Cucumber

Summer picnics are right around the corner, and I challenge you to take a healthy dish that starts with a cucumber. My Great Grandmother Arizona Henry always loved picnicking in the summer, and cucumber salad was always on the menu.

Cucumbers are about 96% water and can help you stay hydrated on a hot summer day. Cucumbers are high in vitamin C, K, magnesium, potassium, and manganese. They are low in calories, which can promote weight loss. If you leave the peel on, you can get extra fiber.

I like to mix and match my summer salads. You can add peppers, fresh mushrooms, radishes, peas, or carrots. Be creative and make a colorful salad, but start with a cucumber.

Cucumber, Tomato and Onion Salad

2 cucumbers

2 large tomatoes

1 red onion, sliced thin

½ cup Mayonnaise Apple Cider Salad Dressing

  1. Prepare and mix all vegetables in bowl.
  2. Add Mayonnaise Apple Cider Salad Dressing as desired.

 

My Grandma always used homemade mayonnaise dressing. She always told me buying salad dressing from the grocery store was a waste of money. Since she lived through the Great Depression, she never spent her money on anything that she could make for pennies.

 

Mayonnaise Apple Cider Salad Dressing

1 cup mayonnaise

½ cup apple cider vinegar

1/3 cup Splenda

  1. Mix all three ingredients, adjusting to taste.
